Sweet Pea Wild Rice Salad

Ingredients

6 servings

2 cups cooked wild rice
1 pkg (9 oz) LeSueur Early June Peas, prepare as directed on pkg
1 cup sliced celery
3 scallions, sliced
⅔ cup shredded carrots
½ cup diced yellow bell pepper
1 cup Crystal Farms® Finely Shredded Swiss Cheese
6 large green olives, chopped

Dressing (whisk together):
½ cup low-fat mayonnaise
2 tbsp Teriyaki Stir Fry Sauce
salt and pepper, to taste


Cooking Directions

In large bowl, toss salad ingredients. Add dressing; toss. Cover and refrigerate 1-2 hours prior to serving.
