Baked Chicken Caesar PastaOn A Budget
Ingredients4 servings 8 ounces (2 cups) uncooked rotini pasta
1 tablespoon butter
½ cup chopped onions
1 cup sliced mushrooms
½ cup chopped red bell peppers
2 cups rotisserie chicken, cut into small pieces
½ cup chicken broth
½ cup Caesar salad dressing
1 cup Caesar-flavored croutons
Cooking DirectionsHeat oven to 350° F. Spray 2 quart (11x7-inch) baking dish with nonstick cooking spray; set aside. Cook pasta according to package directions; drain.
Meanwhile, melt butter over medium heat in 2 quart saucepan. Cook onions until soft. Add mushrooms and peppers, stirring occasionally, cook until tender. Combine cooked pasta, cooked vegetables, rotisserie chicken, chicken broth, salad dressing in prepared pan; mix well.
Combine croutons and Parmesan cheese in resealable bag. Using fingers or rolling pin; crush croutons into course pieces. Sprinkle over top of pasta mixture. Bake 18 to 20 minutes or until cheese is melted and mixture is heated through.
