Shrimp and Feta Bake
Meals for Two
Ingredients
2 servings
6 ounces uncooked fettuccini
½ pound (26-30 count) cooked shrimp, peeled, deveined, tails removed
½ cup grape tomatoes, cut in half
¼ cup pitted kalamata olives, coarsely chopped
2 tablespoons butter, melted
½ teaspoon grated lemon peel
¼ teaspoon salt
¼ cup Crystal Farms® Crumbled Feta Cheese
Cooking Directions
Heat oven to 350° F. Spray two 1 quart baking dishes or one 2 quart with nonstick cooking spray. Cook pasta according to package directions. Drain. Place equal amounts pasta in each prepared baking dish. Top with shrimp, tomatoes and olives. In small bowl stir together melted butter, lemon peel and salt. Pour over shrimp. Sprinkle with feta cheese. Bake 10 to 15 minutes or until heated through.
